Clean & Skin...soak in mild salt water and vinager overnight in the fridge. Use either a cast iron dutch oven or a roasting pan with a lid whichever fits the racoon. Place meat and water, salt, pepper and any other seasonings desired then slow roast 350 degrees and check after about 3 hours...if fork tender then put in whole sweet potatoes and continue to roast til potatoes are done. Oh...almost forgot put butter on the sweet potatoes and coon about every 30 minutes or so to baste. Melts in your mouth....and excellent.. Never would have believed it but an Aunt of mine fixed this years ago and it was delicious!!

I have eaten many ; the only way for most is parboil till about tender then put on BBQ grill on low heat with lots of sauce till done.can't beat it with a stick.taste sorta like pork.
If you can get one about 1/2 grown,just cut it up like a rabbit or chicken and pan fry in hog lard.great meal with stomped taters and gravy.
