Yes. I use onion's, tomatoe's, a small amount of garlic powder or salt,(real garlic taste bitter to me) Peppers of your choice( I use jalopeno and poblano(roast these for a brief period), cilantro, lime juice, salt and pepper(reduce if you used garlic salt instead of powder) and a small amount of olive oil. I have never tried to can any of it. I just like it fresh. I don't like the ones that look like ketchup. Good Luck. Capt Brad.

PS. I also used tomatillo's one year I got them to grow. I've tried to grow them ever since with only marginal success. Maybe the Texas boy's could help you with that. Good Luck. Capt Brad.

My sister's recipe for easy salsa:
1 lg. can diced tomatoes (28 oz)
1 jalapeno pepper
15 fresh cilantro leaves
1 med-sm onion chopped
3-4 chopped green onions
1 clove garlic minced
½ tsp. cumin
½ - 1 tsp. salt
½ - 1 tsp. pepper
Romans 8:28
1 lg. can diced tomatoes (28 oz)
1 jalapeno pepper
15 fresh cilantro leaves
1 med-sm onion chopped
3-4 chopped green onions

½ tsp. cumin
½ - 1 tsp. salt
½ - 1 tsp. pepper

Is there any other type?
If you just want a small amount take
4 to 5 fresh tomatoe's
FRESH (lol) Garlic or out of a jar if you must about a clove
1 med. onion
4-5 jalapeno peppers more if you want.
Lime juice
Place all in a blender and blend to your fav. thickness.

2-3 jalepeno's ( one Jalepeno' and one Habernaro is good if you like hot!)
4 green onions
1 bunch fresh cilantro
1/2 tsp garlic powder ( more or less to taste )
1 tsp onion powder ( more or less, to taste )
2 TBSP crushed red pepper
1 tsp black pepper
1 tsp cumin
Blend tomatillo's and spices in blender, add cilantro, peppers, and onions, blend to desired cosistency.
1/2 to 1 tsp of Xanthan gum can be used as a thickener.
Wife loves this stuff, I cant make it fast enuff for her!
Might add a splash of lime juice if you like, as I recall the original recipe called for it but I havent used it.
Just my uneducated opinion!

I think the salsa is tough to can. I make a salsa that is very similar to the ones above and it is wonderful when fresh. However I canned it and it was pretty bland when opened later. Maybe it would be better to freeze it, anyone else tried this?
