Deer Sasuage?

Try this country sausage recipe:

7 lbs fresh pork shoulder
3 lbs venison
4 tbsp salt
3 tbsp sugar
1 tsp crushed red pepper
1 tsp cayenne pepper
1 tsp ginger
1 tsp nutmeg
1 1/2 tbsp thyme
2 tbsp sage
1 cup ice water

Grind meat through a 1/4 or 3/8" grinder plate. Add all ingredients to the meat and mix well. Form into patties or stuff into 22-26mm sheep casing.

sweet and hot italian bulk

20lbs ground elk
10lbs ground venison
10lbs ground pork fat
mix well
add
1pack veccis sweet italian spice
1 pack veccis hot italian spice
mix well again and regrind
and wrap and freeze

best spagetti lazugna etc.
