Picked up some jerkey recently. he vac seals all his stuff including the jerkey. He told me to freeze what I was not going to immediatley use, and refrigerate the rest, but open the bag first. Basically he said NEVER store it unfrozen in a vac sealed bag. He went on to say he cant even have jerkey vac sealed in his building unless its frozen or he' ll be shut down. Anyone else ever hear this

New to me is it a U.S.D.A. restriction....

If no cure is used than it has to be treated as raw meat would.
