Ugly Drum Smoker Jerky

Google "Ugly Drum Smoker" and then make yourself one. Just made jerky with mine over the weekend, and it was awesome. You can't buy a better smoker for the money, and they're a fun project.
Here's my own recipe:
2-3 T Colemans dry mustard
2 T brown sugar
2 T red chili flakes
3 T salt
1 T garlic powder
1 T black pepper
3 Lb vension roast, sliced to 3/16"
1-2 tsp liquid smoke
1/4 cup water
3/8 tsp curing salt (pink salt)
Mix all ingedients except venison to combine well, then mix into venison and make sure it is all coated. Marinate in the fridge overnight. Then into the smoker it goes until the jerky snaps instead of bending. I set mine at 170 and it took about 4 hours.
Then onto a plate for a couple hours, before putting into zip-locks.
