Dove question

in y'alls opinion what is the best way to cook dove?...Im more of a white meat person,not a dark meat,and dove just taste so gamey!! but I had snow goose yesterday on the grill and smoked it real slow and it was absolutely amazing,I got a green egg,so im thinkin since dove season opens today here in Nebraska,what I will need to do this year with all the doves I kill is marinate em and smoke em just like goose?...whats yalls opinion?..thanks

Make a tin foil tray (fold sides so it is like a bowl) cut up onions, cover bottom of tray, wrap dove breast in bacon and set on onions, add a tablespoon and a half of butter season with whatever you like, close tinfoil tray up to form a packet, cook on grill until bacon is done. That's my absolute favorite way.

Sandwich a slice of jalapeno and a slice of cheddar cheese between both breast halves. Wrap with bacon and place on the grill. Baste intermittently with real butter until bacon is done.

Gonna have this tonight for supper. Dove kabobs. Marinate dove breasts in zesty Italian dressing (add clamato juice and minced garlic for some extra zest). Wrap each breast with bacon and shove through stick to hold everything together. Throw in chunks of all your favorite veggies. baste with Italian dressing while grilling.

I do dove poppers... one breast half, one slice of jalapeno, a piece of cheddar and wrap in bacon (cut bacon in thirds), secure with a toothpick.
Throw some foil on your grill grate and bend up the edges to keep grease in. Throw all the poppers in there, turning occasionally until the bacon is cooked and breast is cooked through. Takes about 10 - 15 minutes at high heat.

What I do is let them marinate in soy sauce and garlic powder for about an hour. After that i cut up an apple and wrap bacon around the apple and dove. The apple keeps the dove moist when it is on the grill. Killer combo!!
