New stuffed deer tenderloin recipe!!

Default New stuffed deer tenderloin recipe!!

Just made this last night and I can honestly say its the best deer iv ever had!!

Ingredients

• 1 Venison Tenderloin
• Marinade (olive oil, garlic, paprika)
• Patty sausage (Jimmy Dean)
• 1-2 Jalapeno peppers
• Onion
• Smoked Guda Cheese
• Bacon
Instructions

Marinate tenderloin to your liking. Cook patty sausage with onion and jalapeno until almost done. In separate pan cook bacon half to ¾ the way done and drain most of the bacon fat. Split Tenderloin down the middle. Spoon in patty sausage mixture in tenderloin and add smoked guda. Push Tenderloin back together. Cook tenderloin in the pan you cooked the bacon on each side for 3 minutes. Put tenderloin in baking dish and add the rest of the sausage mixture. Add bacon and smoked guda on top. Bake at 400 degrees for 25-35 minutes depending on size of tenderloin.

I know that stuffing the loin increases cook time but by how much? If everything is almost cooked then the 6 minutes you had the tenderloin in the skillet should have almost had it done, didn't the 40 minutes in the oven get it overdone? I have put whole tenderloins on the smoker that goes at 235 degrees, and usually 30 minutes or so will get them to 130-135 degrees.
Were yours medium, well done, or what. Just curious.
