Default Question about smoked sausage?

i was wondering if i can freeze venison meat that i want to use for smoked sausage after grinding and mixing, just before stuffing. i am trying to do grinder/stuffer jobs at one time and then smoke when i can as smoker wont hold everything i want to mix. Any advice is appreciated.

worked for me............ ground,mixed and vacuumed sealed last year just stuffed and smoke last week was YUUMMMMMY!

I wouldn't add any spices till you thaw it out.

We here at FriscoSpices reccomend freezing the meat before making sausages, it helps to leech the blood out of the meat when it thaws. We grind it into 3# meat bags and keep it that way until we make sausage. That way if you want to make smaller batches you can by thawing only what you need.
