Default Dear Burger Mixture Ratio

2 simple questions

A. Do you mix regular hamburger with your ground deer?


B. If so ..what's your ratio?

Some people will mix some pork or beef fat in, some add bacon. My wife won't eat burgers so I grind mine straight and then use it in chillie, sloppy joes etc. I have also heard it is better to freeze it straight and if you want to season it season it before you prepare it. The fat is the first part of the meat to break down so it will have a shorter freezer life if it has been mixed with something.

For Burgers I mix beef fat/suet 1 1/2- 2lbs beef fat -10 pounds venison.

For Meatloaf or Meatballs I mix 3/4-1lb pork fat,and 3/4=1lb beef suet -10 lbs venison

For sausage I mix 50% porkbutt- 50% venison

ok guys..sounds like I['ve been messing up..glad I didn't make any this year.

I really had meat loaf in mind...and I know how mushy the consistancy of ground deer can be..so I probably won't make any..If I do ground deer I won't add nothing I guess...I could use it in spegatti or chile ...or patty it up for burgers..

Don't "not" add anthing based soley on my comments. I don't know how much venison you eat. If you will consume all of it by next season you should be fine. I personally don't eat a lot of burgers so I grind mine straight. Plenty of people add stuff and freeze it but I wouldn't let it go more then a year in the freezer.

If your going to make meatloaf you can always add 1/4 ground burger and 1/4 ground pork to 1/2 ground venison. This will stretch out your venison and still add moisture and flavor.

I add half beef burger and half deer. This is good for about a year. I used to use ground pork but after 6 months got that old taste to it. Have made these burgers for people that said they didn't like deer and they didn't know the difference.

grind yourself up some bacon and mix with it. Makes a good venison bacon burger.

I think I will grind all burger straight up and just use it in chile...or other loose ground beef recipes..i want to taste the venison flavor..
