I have a bunch of knifes and I find that nothing beats a 6 inch or shorter filleting knife. they are very flexable (or should be) and bend around the bones. One note of caution is that I have a slight RH bend in most of my knives.

I was handed a well used one once from a guy that ran a meat processing plant. He closed up shop and put the building up for sale. My partner and I were touring the plant for possible purchase - not to be used as a processing plant. The knife was still stuck to a magnetic strip on the wall. The seller knew I hunted deer so he took the knife off the wall and gave it to me telling me I will love it.
He was right! It is the only knife my wife and I both use to cut up meat.

I teach at a Tech school. We have a meat processing program, and the meat cutter uses nothing but Forschner knives. They're cheap, easy to sharpen and damn near indestructible.
