Almost Heaven WV - Ramp Pie

2 cups crushed Ritz crackers
10 tbs butter/margarine
3 cups of cleaned ramps
2 eggs
1 cup milk
1/2 cup shredded mild cheddar cheese
Salt & pepper to taste
boil ramps untill tender 10/15 minutes
Melt 5 tbs butter with 1 1/2 cups of cracker crumbs and press into reg. size pie pan.
Place ramps into pan and spread.
Beat eggs and milk- add salt a pepper to taste.
Pour mixture over ramps- Sprinkle cheese on top and add rest of cracker crumbs.Dot with remaining 5 tbs of butter.
Bake at 350 degrees for approx. 30 minutes

Guys, check out the post in Off Season about ramps. They are a combination of onion/garlic type of wild onion.

I own a farm in Braxton county WV, and went to college at WVU. The first time I had ramps was at the Ramp Festival in Webster Springs. This was in the late 80's. I ate a bunch...and thought they were great. Strong but great.
For the next 3+ days I stunk like onions. I don't mean mildly...I mean I outwardly stunk.
Only good thing was that the guys I lived with ate them too, so we all stunk!
I've had them several times since...I just make sure to eat them with the same folks I'll be spending the next few days with.

GRNDZER...You'd be surprised how many folks in Ohio don't know what a pepperoni roll is. That's a staple food in WV. Right up there with vienna sausage and treat. LOL
