Thought you guys might enjoy this site. This guy has a whole site dedicated to processing meat. The Poles have a big tradition of smoking and preparing meats. Might interest some of you guys. Check out the Smokehouse Plans, hope to make one of these one day, need to check my town regs first.

Thanks for the link Tody PSE, looks like alot of info there. I modeled my smoke house after what my great grand parents used but smaller. Simple 8x8ft room with concrete floor with a register in the floor for wood, has 2 dampers at roof level.
