Hey everyone,
I just bagged a couple of geese the other day andI am wanting to make some jerky out of the breast meat. I knew a guy several years ago that did it and the jerky was wonderful, but I can't seem to find him to get the recipe. Do any of you have a recipes for goose jerky. Thanks!

Hawaiian
2 lbs ground meat (Goose)
1tsp salt
1tbsp brown sugar
¼ tsp cayenne
1 tsp garlic powder
1 tsp ground ginger
½ tsp black pepper
¼ cup soy sauce
¼ cup pineapple juice.
Mix all together, then roll out between plastic wrap to about 1/4 " thick with a rolling pin. Use a pizza cutter to cut into strips, place on a drying screen and put in your dehydrator, or put it in your smoker on low (about 130F for about 4 hrs until it is dry but still plyable.

"Hi Mountain" jerky/sausage mix makes a great product. Easy to use and comes in different flavours. You can usually find it at Wally World or your fav outdoor store. Good stuff.
