It all depends on what you put in it.
You say pork, are you talking 50 % pork and 50 % pork fat?
Are you saying pork butts?
What about salt, sugar, preservatives, meat tenderizors, fennel, sage, pepper, and all of the other stuff that you put into your sausage?
Good deer meat is 100% Protein.
Then again, I don't know if you trim all the fat off of yours or not.
You would probably have to take it to a University somewhere and have it tested.

Yeah, I don't know... I don't trim all the fat off. I put all my extra meat after butchering in a bag and take it to a local place and they make the sausage. i try to keep as much fat as I can out. I was just curious if anyone had any ballpark figures per oz or pound or something.
