I like salmon, northern pike, walleye, and perch the best.

Some of you guys are saying catfish, maybe it was just the way I cooked it but when I caught some catfish outta a inland lake and it was nasty! Or maybe it was just the catfish itself, because I hear many people enjoying catfish.

Down here in south louisiana I am going to have to go with either red's,speck's or catfish. Nothing beats fresh blackened redfish...

need a good walleye recipe. normally i dredge 'em in corn meal with a little cayenne, and then fry the fillets in bacon grease. any other suggestions?
Some of us in Canada still prefer to call them Pickerel;)

Here's one that I like.

2 Fillets, 2 tblspns melted butter, 2 tblspns chopped parsley (fresh), 2 tblspns lemon juice, 1/4 tspn dried dillweed.
Lay fish flat in a lightly greased glass dish in a single layer. Salt and pepper to taste and pour the rest of the ingredients over fish. bake at 425'F for 10 minutes or until fish is opaque. Broil for 2 minutes or until golden.

*ROFL* Ya'll can sure tell who's southern and who's northern by this thread, it's great!!;)

Down here in Georgia and at home in northwestFlorida the salt water pick would be GROUPER - black, gag, red, fried, grilled, blackened, or in a sammich! Fresh water is catfish (Yep, catfish) or crappie, although blue gill is awfully good, too!

I don't like mud cat, or catfish that comes from the river or old ponds. We have Great Northern Channel Cat in our pond and it is the cleanest best tasting cat ever and the only way to cook it down here is DEEP FRIED in peanut oil.

Mullet is popular, but it's only good cooked the old way - fried with peanut oilwith just a little bit of bacon grease thrown in. Now, can ya'll guess I'm a country lady andI love tocook, especially SEAFOOD? :D

Folks can't believe me when I say that Northern Pike, caught form a cold lake in the north, can be some unbelievable eating...right up there with walleye (pikerel to you!). I've found that pike in the 7-12 pound class when brought to the pan fresh and cold are without a doubt better eating than most folks would imagine.... it's the bones that puts 'em off ... but the 7-12 pounders have bones big enough to easily find and pull out if you know what you're looking for.
I'm getting hungry.
Ever fished Como Lake between Wawa and Chapleau? Closer to Chapleau I think..

But for smoking Salmon ..for pan frying I agree with fresh caught trout especially brookies over a fire..

Crappie / Channel Catfish / Rainbow Trout

filet the crappie and catfish...
decapitate and gut the trout...

roll in meal and flour and place in a hot skillet with a bit of oil...make sure to fry the trouts tail fin...start there, they are delicious...

Lets say fresh mackeral. boil potatoes and two large onions. when 5 min left to cook turn off heat . plop in a couple of macs, cover and let the steam do the rest.

My favorite are fish in the sunfish family. Bream as we Georgians call them. This includes bluegill, shellcrackers, and red breast. I only keep them is if they are big enough to fillet. Deep fried southern style with hushpuppys and cole slaw.

Geez, you guys are making me hungry. My favorite is blacken grouper or fresh swordfish. My ex-girlfriends brother was a long liner fisherman off the florida coast and sword fish was sooooooooo good.
I tried it at red lobster but it just wasn't the same. Blackened sand shark up to 3 ft. was good too. Its just hard too get good tasting sea food here in the Rockies, but the rockie mountain oysters are good up here.
