I mixedthe meat, eggs, breadcrumbs and onion soup mix in a bowl. Then I spread it out and sorta flattend it out like pizza dough. I sprinkled some shredded chedder and mozerella cheese on it, then added a can of mushrooms. I rolled it up and put it in the oven. mmmmmm....mmmmmm....Good!

Congratulations Windwalker7 , you've just made your first "Americanized" Beef Wellington . Next time wrap it in some bread dough and bake it like the real thing .

I used to spread half the meat in a pan, top with sliced hardboiled eggs and mozzerella cheese. Then top with the rest of the meat, pour a can of baked beans around the meatloaf and bake. Viola, a stuffed meatloaf.
