Default Triing somthing new

Well I'm bored and wanted to smoke some salmon. So I thought as the brine I'd use salt,apple juice, and alder for the smoke. Never triied apple juice b4 but always used apple wood chips. I'm just hopeing it's not to over powering. Any thoughts?

we use apple juice on hams and other types fish, so it should be OK.

Well it's all smokin now, can't wait to try it. Just hopeing that the apple is the background and not the focalpoint . Either way it's Alton Brown style, GOOD EATS

Nothing,and I mean nothing is better than fresh smoked Salmon and a few ice cold beers to go with itIMHO

Well wehad to sample it just to make sure it was safe, it's the rules you know ....... Not bad, the apple was theback ground liked I had hoped. This is the third time I have used this smoker. I upgraded from a brickman water smoker, what a difference, it'snight and day. So much easier plus bigger batches to screw up [8D]wish I had upgraded along time ago.

Great smoker you should try bacon. here is a pic of some Venison Hunter sausage, slab bacon (pork) and venison summer sausage hanging on my cooling rack after smoking.
