Default good ish recipe?

my dad uncle and I go to maine every year fora week and a half
on a fishing trip on the west branch of the Penobscot.
we always make a shoreside lunch and are usually trying new things to put on the tasty salmon. but we havn't come up with anything reallly really easy that is also good.....a minor drawback....


does any one out there have any suggestions?

Pan fried salmon and home fries with onions , I like a dollop of sour cream on salmon fixed this way . Simple and delish !
