4lbs sliced venison. (whoever said you had to slice the venison with the grain? I slice against the grain whenever I can. Makes tenderer jerky)
1/2 cup soy sauce
1/2 cup worcestershire sauce
2 tbls ketchup
2 tbls brown sugar
1 capful liquid smoke
1 clove minced garlic
onion powder, salt and pepper to taste. I often add a little Emeril's essence.
Marinate at least overnight. If you really want the marinade to soak into the meat, use a vacuum sealer and canister.
This is the best recipe that I have had.
