Rich,
A broadhead with a wide cut is a good choice. Personally, I use the NAP Gobbler Getters, but I've heard good things about Vortex, also. Some guys are talking about and using the Gobbler Gulliotine (headshots), but I don't know about that head.
Where to shoot? Butt of the wing is a good spot, base of fan if he's strutting and facing away, where the beard goes into the body is a good shot if he's facing you. My personal choice if given the opportunity is the butt of the wing if possible. Breaks the wing and keeps him on the ground, while taking out the vitals at the same time.

Make sure the arrow DOES NOT pass through. You want the shock of the impact to stay in the bird. Some people have put washers behind the head to keep the arrow from passing through.

I would recommend a big, mechanical head to burn up your KE, and yes, the arrow staying in the bird is great, because he can't fly away with your arrow, never to be found. Rockets are awesome, or, if you want a fixed head, I think Steel Force makes a 2 blade with forward facing serrations. That would work well.
