I used the video at the above link to teach myself how to process my own. Last year was the first time I tried it, and the first attempt was pretty rough. Now, 11 tries later, I've gotten pretty good at it. I end up leaving a bare skeleton just like the guy in this video, but it still takes me a lot longer than 1 1/2 hours.

Rick if you're talking 3 hours to skin, debone, trimand package... that's not all that long. If it's too long a stretch, do the debone, refridgerate a couple days and then do the packaging for the freezer.

All done and wrapped with the Food Saver. Not my first, I've probably done 20 or so but it still took the better part of 3 hours or so.
