We are lucky enough to have a walk in freezer available to us so if we cant cut it up right away it goes into the freezer.

I put mine in a cooler covered in ice for about 5 days or so. I dont know why but that is how i was taught as a kid. i was told it made it taste better so of course you believe your family when your young so i have always done it.
