I've got lots of pressure to get one right out of the gate. My brother is having a baby, and we are throwing a HUGE party. If venison isnt on the table, I will be paying the local butcher quite a bit of money for a ton of beef . As long as I get one in the first month of the season, I'm good.
We eat a lot of bbq, so I think most of the meat will be smoked.

1- jerky
2- ground meat
3- butcher for bologna/summer sausage

all 3 minus the backstraps/tenderloins which hit the grill or smoker for some tasty stuff.

We have tried alot of ways..

1. Back strap steaks...

2. Sausage

3.Italian Venison ..this way is awesome and can turn any tough roast into a 5 star dinner..I wrap this tender venison meat like a burrito with chopped onions, canned mushrooms, sour cream and shredded mozerolo cheese
RECIPE...
You simply dump a jar of Greek peppers with a roast in a slow cooker for 9 hours..The vinegar in the peppers tenderizes the daylights out of any roast making it melt in your mouth..Shred meat ..take out peppers if you like and cook for 15 more minutes and serve..
