The wind while hunting by next to a field

When hunting next to a field, who hunts with their scent blowing into the field? If so, why? If not, please explain that too.
I think in most instances (around my area) that it is helpful to have the wind blowing into the field, in some direction. I plan on shooting the deer before he/she gets to the field, this makes it so they have the lowest chance of smelling me, I assume.
