many im sure....
but sheep are very tough, I think most guys feel sheep are an animal you need to take with a rifle from 600yds.....not sure anyone has taken a marco polo with a bow....
dangerous game I would think would be tough for another/different reason......many guys shoot dangerous game, cape buffalo, lions etc...with a bow yet need the guide/gun backup to finish the job

Toughest to find/locate (that can be hunted anyway) - Snow Leopard
Most physically demanding.... I'd say Musk Ox or Mountain sheep/goat
Hardest to hit... I want to see someone kill a dove on the wing with a longbow... I've seen personally a man take three quail on the flush in one afternoon... its a sight of marksmenship to behold.
You can make any hunt hard on yourself if you really wanted too... small game hunting with a bow can be quite a challenge... or try turkey hunting with no blind... or pronghorn hunting with no blind.

Too many went with toughest to kill, toughest to find or what not....
Tought hunt, Mt. Goat with a bow.
Rhinos would be easy to hunt, hard to kill. Hey look a Rhino.

I was watching a show the other day, and the PH said a mature stallion zebra is about the hardest to get close to because they are super neurotic. The super rare animals I don't count really.
