I just got back from a wild game cooking seminar...

They gave me this tool, with somelemon marinade and a bottle of jerk sauce. Can't wait to try it out.

I don't like liver, and when i shoot a deer the heart turns into jello[8D]:D...

I eat both the heart and liver and love them both but after reading this advisory for one of the states that I hunt I only eat the liver of the younger deer.

DEER LIVER CONSUMPTION ADVISORY
The Connecticut Departments of Health Services (DHS) and Environmental Protection advise sportsmen to limit their consumption of deer liver. Analysis of livers collected from 49 hunter-killed deer in 1991 indicated that some samples had unacceptably high levels of cadmium, a toxic metal. Sportsmen should note this advisory is only for liver and not for deer meat. Because kidneys also concentrate cadmium, it is recommended that this organ not be consumed.

For those who wish to continue to consume liver from deer despite this warning, the following recommendations are made:
[ol][*]Eat the liver of younger deer.[*]Reduce the number of meals of deer liver to no more than a few per year.

High levels of cadmium in deer livers are not unusual in the northeastern U.S., and with this advisory Connecticut joins several other states in this region that have issued similar warnings. For further information about cadmium toxicity call DHS at (860)509-7742.

I love beef liver and onions so I saved the liver from one of the deer I shot and tried to cook it the same way as the beef liver and it was so tough I couldn't eat it. Probably the way I cooked it but never tried it again.

I'm with BubbaHoo. We usually slice the heart in 1/2 " strips
and pan fry it that night. Just a little snack. Use a cajun seasoning
to spice em up. Like tasty little french fries.

I love deer liver, but I'll only take it from a young deer. I think it's more tender.

Last year was the first time I tried eating the liver and heart. I think the heart taste great but the liver is pretty tough. I will give the liver another try this year.
