Heart ~ Liver
Anyone keep the Heart and Liver and/or other entrails for the dinner table?
Actually both are very yummy, it used to be a tradition..now it's kinda faded since all the CWD started becoming public. |

Me, my brother and Dad used to go camping/deer hunting during the Thanksgiving break for 4 days. When we killed a deer, we always cooked the heart and liver that night.
We never brought it home to cook b/c my mom would never cook it, much less eat it. |

I always save the heart and liver , my wife and I enjoy eatting the liver and one of my friends always wants the heart.

My dad will always boil the heart and slice it up for sandwichs. Its actually pretty good.

Never did like liver. My grandpa always has us save the heart and liver for him. Must not be too bad for ya, he is 85 years old.

The heart and liver are usually the second meal, the first is the backstraps.

never tryed either i like liver beef chicken so on but not any heart for me

My Dad always likes the heart.He has prepared it multiple ways. So far hehas stuffed the heart and baked it, sliced itand fried it with onions, andsliced it up andpickled it. I've had it fried with onions and pickled. Both make good table fare.

I've had pickled and sliced and fried with onions etc..the stuffed sounds interesting post up a recipe!

When my grandfather was alive I kept the liver and heart for him. I've never eaten the heart and I don't like liver. Now I'm not sure what to do with the heart but I keep the liver to train my blooding tracking dog.

Heart-First thing we eatsliced and fried in butter and onion with a little garlic salt YUM YUM!!!!!!! I hate liver!!!!!

Can't stand liver. But young deer hearts are really good. I cut out the valves and dice it up with mushrooms and onions and saute in butter. Man that is good stuff.
I've pulled a couple out still slightly pumping and right onto the cutting board. Tom |

personnaly i dont, but i have had fried heart someone else fixed one time, i was surprised, it was yummy!

I have pickeled the heart,and I have fried the liver with onions or have used it to make a 'pata'. If you are not using the heart or liver you don't know what your missing. That's assuming you eat beef/chicken or other organs.

I've even heard of folks who eat the kidneys..Never tried that.
I asked How do ya cook'em?? They say it's easy get some water and boil the piss out of'em. |

I heard that you weren't supposed to eat the organs...due to pesticide use, etc. My parents keep asking me for the liver, but I have yet to take any to them. Is it safe? |

I just got back from a wild game cooking seminar...
They gave me this tool, with somelemon marinade and a bottle of jerk sauce. Can't wait to try it out. ![]() |

I eat both the heart and liver and love them both but after reading this advisory for one of the states that I hunt I only eat the liver of the younger deer.
HH DEER LIVER CONSUMPTION ADVISORY The Connecticut Departments of Health Services (DHS) and Environmental Protection advise sportsmen to limit their consumption of deer liver. Analysis of livers collected from 49 hunter-killed deer in 1991 indicated that some samples had unacceptably high levels of cadmium, a toxic metal. Sportsmen should note this advisory is only for liver and not for deer meat. Because kidneys also concentrate cadmium, it is recommended that this organ not be consumed. For those who wish to continue to consume liver from deer despite this warning, the following recommendations are made: [ol][*]Eat the liver of younger deer.[*]Reduce the number of meals of deer liver to no more than a few per year. [/ol] High levels of cadmium in deer livers are not unusual in the northeastern U.S., and with this advisory Connecticut joins several other states in this region that have issued similar warnings. For further information about cadmium toxicity call DHS at (860)509-7742. |

I love beef liver and onions so I saved the liver from one of the deer I shot and tried to cook it the same way as the beef liver and it was so tough I couldn't eat it. Probably the way I cooked it but never tried it again.

I'm with BubbaHoo. We usually slice the heart in 1/2 " strips
and pan fry it that night. Just a little snack. Use a cajun seasoning to spice em up. Like tasty little french fries. |

I love deer liver, but I'll only take it from a young deer. I think it's more tender.

Last year was the first time I tried eating the liver and heart. I think the heart taste great but the liver is pretty tough. I will give the liver another try this year.
