I have known some people that think the esophagus must be removed so the deer doesn't get contaminated. I wonder if that is why there is a gash in the neck. Interesting to see how some people tkae care of their deer after the shot. Some cut out the tarsals, some "bleed the deer", others remove the esophagus. Me, I just shoot em and cut em up!

actually i cut the neck because when i was hanging it the cavity still had alot of blood so i made a vent for it to empty out!! that was the only thought, nothing kosher!!
