October Country is one place to look. Muzzleloader Builder's Supply is where I would go if I want to make one from scratch.

Since you want to go turkey hunting, I would go with minimum of a .62 caliber fowler. Actually bigger might even be better. All of this is something you might want to look into.
If you want a quick easy way around all of this with a quality firearm, then get yourself a .75 caliber Brown Bess Musket. You can load it will shot for any bird hunting and a roundball for any other critter that you might want to stop....
