Your Rem 700ML can shoot 2 types of caps, either a #11 or a musket cap. If you install a conversion kit or you gun came with one installed you can also shoot 209 shotgun primers.
The #10 cap is primarily for pistols and a bit smaller than #11's. #11's come in two varieties either the standard charge or the magnum charge.
Musket caps do not really offer that variety, although you can get them rimmed (like a top hot) or rimless. They are physically larger than #11's.
In my opinion the best most reliable #11 magnum type cap out there is the Dynamit Noble 1075+. I have used it for several years,
Shotgun primers (209's) - If your Remington came with a factory 209 nipple and a factory 209 bolt you are not going to like the factory nipple. To much blow back and you have to pick the spent nipple out. If you want to shoot 209's and that would be my recommendation if your state will allow it - then order the Canadian made nipple from Cabelas. It is way cleaner and the spent 209 is easy to get out. I have two Remington's nd I have used both conversions kits - I am confident you would like the Canadian conversion better than the Remington.
I really can not offer much advise on which 209 peimer is the best - I do not and have not shot the modern more exspensive 209's developed for ML's. I am shooting the old Remington 209-4's for 410 shotguns, they are an excellent primer for ML's, but I do not think they are available anymore.
Hope some of this helps... Cayugad should pick up on this post and be able to provide some insight on the more modern 209's.

The best #11 cap IMO is the Dynamite Noble RWS 1075. After that I like the CCI Magnum (not the standard) #11 cap. And if forced to I will shoot the Remington Caps. The RWS are just a great cap, hands down. When I use them I seldom if ever have any problems.
A good 209 Primer is the Winchester W209 and the Remington Kleenbore Primer. Stay away from the Winchester WML 209. They are really a hot powerful primer. I never had the pleasure of the new Winchester Triple Se7en primers. If I shoot pellets I use the W209 primers. If I shoot loose I use the Remington Kleenbore Primers.

I also have 2 Rem.700ml's One I changed over to the Cabela's 209 kit. Still searching for the primer I like with it. Have decided that since I do not have the dreaded crud ring I won't pay the high price for the special ML primers till I have tried all the rest.
The other Rem.700ml is still a #11 cap shooter. I have found the CCI mag caps work just fine and are easy to find in this area. The Remington caps work OK too. Just remember to keep that bolt clean and use a dri slide type of lube on it.

The New Remingtons are just as good as the RWS. I like the Remingtons.

"Boy... those Dynamit Nobels are alot louder & strongerthan my Remington caps".
Just "our" opinion thou -- meaning several of us standing by at the range table - including two DNR Rangers.......... but others here may disagree & we-all respect that

I got turned on to the Vorderlader-Zundhutchen Dynamit Nobel RWS No. 1075 many years go by a friend who actually taught me a great deal about muzzleloading. We flocked to these caps because of their dependability, extra spark, and cost at that time. When suddenly the supply of RWS 1075 dried up we went to the CCI.
I did not like the CCI caps at first. I considered them no better then the Remington actually. CCI must have learned their lesson as they then increased the powder and realiability of the cap and produced a CCI Magnum. These are my second choice of cap when I can not find the RWS.
I will admit about a year ago I was forced to purchase Remington Caps. All other caps in the area were gone. I shot them for a couple tins and had to admit they had made great improvement but were still not as dependable as as the others. The king of the caps IMO are still the RWS No. 1075
