My advise to the OP is too look for a good 4x4 with a spread of at least 25 inches and about 25 inches high. A mature mule deer buck will be about 22-24 inches wide at the tips of the ears. So if he is wider than the ears and as high as he is wide, that would be a good buck for your first mulie.
I don't know what a buck like that would score since I don't do hunts for inches of antlers, but it would make a pretty mount. Lots of times the old bucks won't get much wider than 25 inches but they carry a lot of mass and usually some sticker points. One big thing to look for is deep fork both front and back. If the forks look at least 6-8 inches deep (a mulies ear is about 8 inches long for reference) he will be a mature buck. Lots of times the young bucks will have weak front forks or even missing a fork and be a 3x4.
The single best mule deer rack I've ever held was taken by my grandfather when I was about 10 or 12. That buck had 4 on one side and 6 on the other with big heavy brow times. His spread went an honest 42 inches. The skull plate was sawed in half to make it easy to get out of the brush so it can't be officially scored. This was also the only deer I've ever seen that was over 300 lbs field dressed. Because he was so big my grandfather weighed him on the farm scale at the CO-OP and he went 302. I've had the rack repaired and mounted and it is really impressive. But, deer like that only come around once or twice in a lifetime, if they come around at all. Many men hunt good mule deer country their entire lives and never see a buck like that.
