Summer caribou is great, but out of all the game meat I have tried, that I can remember at least, the Hawaii axis deer was some of the best. I' d love to get some more of that in my freezer! Moose is tops too, and the nice part is it comes in mass quantities.

As far as sausage goes, the black bear that I shot last spring was excellent as summer sausage.

Nothing like having a lot of variety in your freezer though.

#1 a fat cornfed mallard, roasted med-rare
#2 moose tenderloin
#3 a nice bear roast with roasted root vegetables
#4 an elk steak BBQed rare
#5 deer tenderloin buttons sauted in a red wine reduction with blackberry sauce

Well, I' ve had lots of moose, and like it much better than deer. I' ve only had caribou once, but liked it as much as moose.....
