Mix enough water with baking soda so that it makes a very thick paste.
Using a stiff brush, brush the paste into the backpack thoroughly then let sit to dry.

When what little water is there evaporates you will be left with baking soda powder which will rub off easily and keep your backpack scent free for a long time.

I would also hang it outside upside down and open in a tree or something.
