Good luck with the walleyes. A little tip for the fish frys that we do is to use potato flakes insted of bred crumbs if your going to deep fry. We eat walleye here all summer long and this method has to be my favorite. The trick is that you have to add seasoning after you dip the fillets in the egg wash and then coat them in the potato flakes after they have been seasoned. Talk about crispy
