Liquid, I'm from monmouth county NJ. I've been looking for a butcher also. I didn't get a chance to drop off any deer at Ely's. I did have their samples last year at the Jamboree, and they were all great. I've basically used your "garage" type butchering services. I usually just get your standard steaks and sausage. I want to find a place that makes pork roll. I've heard that in Middletown there is a butcher who makes pork roll. Don't remember what the name was or exactly where it is though.
