RE: Grinder?
If your doing small amount a hand grinder or food proseccor attachments will work just fine. However if you plan on doing large quanities best to buy a 3/4 hp grinder. I bought an industrial one off my butcher pal it it mows through meat at 1 hp/variable speed, it also has sausage attachements but at well over G new, it ain't for the DIYer. Before that I used a small grinder and hand balmer, I just did it as I needed.
Most good quality ones will run you 250 and up if you want to get real serious about grinding.
