Phil, i agree with you on letting a deer hang for 4 or 5 days to age. i skin my deer and let them hang so the blood has a chance to drain out of them. i also debone the meat and knife cut the meat. vacuum packing the meat works best if possible. ive found that getting rid of the bone, the steaks and loins taste better.
