The guy has stated he is 70, the 300 winny is no slouch and can be borderline brutal as far as recoil with a 200 gr bullet, my feelings are go with a good tough bullet around 165 gr. and shoot at the rib cage till they get beyond 150-200 yards. that's what I do with my big 7's (an stw and a 7mm allen) they are both way faster than the 300 winny.
I have never lost a deer holding middle of the ribcage no matter what the distance, the closest I ever shot one with my 7mm AM is 307 yards, blowed the bejesus out of a couple with the stw till I figured it out I like accubonds but to each his own.
