Leave it lay where it falls. Coyotes are classified as vermin and you are not required to salvage the meat in CO. Other animals will eat the carcass just like they would if the coyote is hit by a car or dies of natural causes. In nature no meat ever "goes to waste" since lots of things will feed off it.
