Below is a link to a good recipe that's pretty close to what I do, except I add a small Jalapeņo pepper for each rabbit, use chicken stock instead of beef stock, use butter instead of oil, include a 1/2 tsp of Thyme, and don't use Worcestershire Sauce.

This one will work great for rabbit, squirrel, nutria, properly cleaned coon (if you remove the scent glands under the forelegs and along the spine in the small of the back), possum, alligator, and maybe even groundhog (but we don't have those around here). Also, it's GREAT with shrimp.
