Your AR-10 loaded with a good nosler partition or swift A-frame would kill a Grizzly with good shot placement no problem.
As a big game guide in Alaska and having been charged 6 times in just one season. I will not guide anyone Grizzly hunting with a 308. A 30-06 is enuf of a step up that I do allow it. Just know the shots will be considerably closer. I had a client take an 8 footer this past season with one. I would much prefer 300 Win. or better. I've seen enuf hits on big bear that looked like good hits but after he nips at the entry wound and then looks your direction, and then it's oh #$%^. Grizzly hunting think 338- 375.
