Squirrels, rabbits and coyotes do not require a permit to hunt, there are just limits that you have to abide by and for some, certain times of the year that you can't hunt them. You will, however, have to look into furbearer/harvesting permits if you decide to sell the fur (say of coyotes, for instance). Check this link out for guidelines

Have you looked into public hunting land? That's probably a good option for you and your girl for now,to figure out if you like to hunt. There are surprisingly many areas in Kansas with public hunting, the most obvious of which are Hillsdale, Clinton and Perry lakes.
You may want to keep in mind, should you guys end up liking to hunt, land owner whitetail deer tags require a minimum of 80 acres of land owned in order to qualify.
