Semi,
That looks quite tasty. We actually do something quite similar. We cook it down in a crock-pot with some hot peppers and a little cajun seasoning and then when its nice and tender we add a little hot sauce and slap it on some bread and have at it. We kind of enjoy the spicey food since Texas spoiled us while we lived there a few years back.
