Tried beaver over the week end
Had a cooking at the farm and decided to try a beaver that was in the freezer.
Not knowing what to expect I wraped in foil with some bacon on top and put in oven at 200 temp for 6 hrs.
Pleasant surprise to all who tried it. We feed about 40 people doves and deer.
Next time I will fix with veges. and it should be hard to tell from beef stew.
