I love bear meat. Separate the three muscles so you get the top/bottom round roasts and the sirloin roast. You can also cut those roasts into steaks if you wish.The rest(scrap) can be made into stew meat or jerky. You can also roast the bones to add to a soup stock( this makes the stock very rich). Don`t forget about bear burgers also.
