I use my GPS to do exactly what you are talking about. It's a great tool for that. Have you adjusted your compass for magnetic declination? Where you are, because of the difference in location between magnetic north and true north, your compass, unadjusted,will be about 16 deg. off of TN. That could be enough to throw a guy off.
