yes just sub it for venison in a sausage recipe. Make sure its a wild game recipe and not a beef or pork recipe or the fat content will be too low. Depending on the type of sausage you want to make , for a fresh sausage you need at least 25% fat even as high as 50%. for a semi dry minimum is about 20% thats what I use in my slim jim style.
