I have used 120, 140, 160, and 175-grain bullets on whitetail in the 7mm Rem. Mag., and the 7X57mm. I found:
120's did too much damage.
140's were quited adequate.
160's gave too much penetration.
175's were great for elk, but totally too much of a good thing for whitetails AND mulies!

I settled on the 150-grain Nosler Partition as a good compromise weight/type for deer and elk, if both can be shot on the same hunt.

I am now using the Remington Corelokt 150-grain bullet for just deer, as the partition feature of the Nosler is not needed on whitetails. The Corelokts are quite accurate in all my 7mm's (a 7mm Rem. Mag., and three 7X57mm's, plus theyare not priced sky-high.....
