i think its all in how you take care of the meat. we cant hang the meat to let it age down here, so i leave it in a cooler with ice for a few days. every day drain the bloody water out and replace with fresh ice. works for me.
that's what i do with deer, and it works for me as well. sometimes i'll leave it in the cooler longer, depending on how much meat i have in the cooler.
