Before you give it up, talk to the ones against it again and remind them how much your father in law loves hunting and how excited he gets looking at the photos. Then explain the setup again (drive right to stand and you'll be there with him the whole time). Put a camcorder into the plan to video the hunt with him. Then ask that they don't take this joy away from their father/husband. It might be his last and he should have one to remember and relive through video time and time again. If this does not do it, I don't know what would.
Personally, if my wife told me I could not hunt anymore due to my medical problems, I would probably retaliate with taking away something she loves to do. I know that sounds childish but as a really good book I read says "do unto others as you would have them do unto you".
